Hainanese Chicken Rice is one of Singapore’s national dishes, adapted from another famous Hainanese recipe named Wenchang chicken. It is also served throughout countries like Malaysia, Vietnam, and Thailand. Hainanese Chinese people who moved to other Southeast Asian countries brought this recipe with them and popularised it. However, today we will learn a gluten-free version of this dish. Moreover, this chicken dish is very healthy and rich in protein and useful fat. Hainanese Chicken Rice Ingredients
Ingredients
Chicken-
- Fat trimmed whole chicken – 1.6 K
- Dry Chinese red dates – 15
- Salt – 2 tbsp.
Fresh Chilli Sauce-
- Olive oil– 2 tbsp.
- Fresh long red chilies – 5
- Fresh small red chilies -3
- Garlic cloves – 3
- Small brown onions – 1
- Salt – 1 tsp.
- Sugar – 2 tsp.
- Juiced lemon – 1
Ginger Spring Onion Sauce-
- Olive oil – 5 tbsp.
- Thinly sliced fresh ginger – 200 g
- Spring onions – 5
- Garlic cloves – 3
- Salt – 1 tsp.
- Brown Sugar – 3 tsp./ sticks
- Juiced lemon – 1
Rice-
- Basmati Rice – 2 cups
- Olive oil– 2 tbsp.
- Knotted Pandan Leaves – 2
- Bruised ginger- 5 small slices
Chicken broth from cooking
Garnishing-
- Coriander Springs – 3
- Lebanese cucumber- 3
Dressing-
- Gluten free pure sesame oil – 2 tbsp.
- Gluten-free light soy oil – 1 tbsp.
Steps to Cook
Ginger Spring Onion Sauce-
- Put ginger, spring onion, garlic in the mixer and make a coarse paste
- Set aside 2 tbsp. for marinating chicken
- Take out rest of the dough into heat resistant bowl
- Heat the extra virgin olive oil and add it to the mix
- Add salt, sugar, garlic, lime juice and combine well. Set the mix aside
Fresh Chilli Sauce-
- Add red chilies, garlic, onion, extra virgin olive oil into the mixer and make a smooth paste
- Take the paste out into a bowl and add salt, sugar, lime juice and mix well
Chicken-
- Clean and wash flat trimmed chicken.
- Rub salt, ginger and unseasoned spring onion sauce onto the chicken skin and cavity and set it aside
- Fill half a pot with water and bring it to boil, skim the surface
- Put in the Chinese dates and turn down the heat.
- Cover and simmer for 30 minutes and turn off the heat after
- Remove the dates
- Get chicken out of the pot and set aside
- Reserve the broth for cooking the chicken and the rice
Fragrant Rice–
- Wash the rice well
- Place it into a rice cooker with the olive oil, pandan leaves, ginger and a few cups of water and cook
