Amaranth: 1 cup

Boiled chickpeas: 1/2 cup

Cucumber: 1/2 cup

Onion: 1/2 cup

Tomato: 1/2 cup

Mint leaves: 1/2 cup

Coriander: 1/2 cup

Flat-leaf parsley: 1 cup

Lemon rind: 1 tsp

Lemon juice: 2 tsp

Olive oil: 2 Tbsp

Sumac powder: 1 tsp

Pine nuts: 3 tsp

Salt: as per taste

To start with, take a medium-sized skillet and put it on medium heat. Now, add the amaranth and stir continuously for one to two minutes or until it starts to pop. When all the amaranth pops up, remove it from the skillet and soak in a bowl of steaming water for two hours. You need to be careful about the amount of water as you need a little amount of it so that the amaranth soaks up all the water in the bowl. Also, instead of soaking the amaranth, you can boil it in water for twenty minutes or until it’s tender. Then, in a bowl, add the cucumber, onion, tomato, mint, and coriander. Chop the parsley finely and add it into the bowl along with the amaranth.

Now, add the salt, lemon rind, olive oil, sumac powder, lemon juice, pine nuts, and the chickpeas. Then, toss all the ingredients so that they mix well together. After you are done with the last step, your amaranth salad is ready to serve. You can also refrigerate this salad if you want to have it cold, or you can warm it in the microwave if you want it hot.
